Chocolate

This recipe for healthy, nutrient dense chocolate is an adaptation of a recipe from Lindsey at homemademommy.net. We store ours in the freezer, but it doesn't last too long there.

What you need:
1/2 cup coconut oil
1/2 cup ghee (you can use all coconut oil or all ghee)
1 cup raw cacao powder
1/4 cup raw honey or maple syrup
1 cup peanut butter or 1 cup organic sprouted pumpkin seeds
1 tsp. vanilla
pinch of salt (if using unsalted peanut butter)

What you do:
Place coconut oil in glass bowl (I use a 2 cup measuring cup)
Place in pan filled with an inch of water
Over medium heat, melt coconut oil
When melted, remove from heat, add ghee and let come to room temperature
Place oil and ghee in VitaMix
Add remaining ingredients and blend until smooth
Pour out on parchment lined cookie sheet
Place in freezer until solid
Break into pieces
Enjoy!

    1. I order my organic raw cacao powder from iHerb. Jimbo's and Whole Foods also sell it. Try it! I know you'll be much more disciplined than I am about how much chocolate you eat at one time. ;-)

  3. Hi Alisa! Successfully found your blog and the recipe for that amazing chocolate. One question-- did you put peanut butter in the one you made in DC? I didn't taste peanut and usually it's a pretty strong flavor. Thanks! Hope the rest of your time there was wonderful! -Pam

    1. Hi Pam! Loved seeing you, Matt and your darling kids! At the cabin, I used sprouted pumpkin seeds instead of pb. Just added them after the rest of the ingredients were mostly blended. Pulsed a few times with the pumpkin seeds, so they would still be crunchy. 😘
